This zesty wine that stands up well year after year with its consistent flavor. Perhaps in part due to the fact that the grapes are harvested during the cool of the night to fully capture their pure flavors and vibrant acidity.
Fermented in stainless steel tanks, 21.7% in neutral French oak barrels, and a very small portion in a concrete egg. Following fermentation, the wine is then aged five months in neutral French oak barrels.
