Each of the Dalton Estate wines was created with the utmost respect for the vineyards and the natural flavor of the grapes. Using sustainable practices throughout the wine making process, Dalton Winery strives to minimize their intervention to ensure that the wine you taste is as should be.
Harvested by hand during the middle of August and transported the bunches are then pressed to extract the juice. The wine is then split into two: half fermenting in stainless steel and the other half in barrels. After fermentation, the wine is ready to be aged for six months in barrels before bottling.
