These grapes are strategically picked at night to preserve the freshness and purity of the fruit flavors, then gently de-stemmed and pressed. After its been fermented in a combination of new and used oak barrels, less than 10% of the wine is put through a secondary fermentation to make sure that the wine retains its natural acidity.
